Maple Pumpkin Muffins

1 ½ cups Flour (I used spelt)
3 tsp baking powder
½ tsp salt
1 egg
¾ cup milk
½ cup cooked or canned pumpkin (I used pumpkin I canned last year)
¼ cup butter, melted
Diections:
1. Preheat oven to 400°F.
2. Grease 1 medium sized muffin tin or line with baking cups.
3. Combine and add liquids to dry ingredients and stir only until combined (batter will be lumpy).
4. Fill prepared muffin tin 2/3’s full.
5. Bake in 400°F oven for 20 – 25 minutes, or until golden brown.
6. Remove from pan, let cool on wire rack.
Note: Recipe can be doubled.
